High Protein Fried Chicken

This is going to be a short, quick post..... but I have to share this with you.

I am really trying to cut out unhealthy carbs from my diet and I love fried chicken, so the two just don't mix.  I found this recipe on a friend's Facebook page and just thought I would pass it along!!

And here is the recipe:

  • Blend 1c almonds in a blender or food processor with 1/4c parmesan cheese. 
  • Blend until it looks like bread crumbs ( I like the almonds to have some small pieces in it).
  • Add in any seasoning you like. 
  • Dip chicken into almond crumbs.
  • Cook in pan with either a tsp of coconut oil or spray. About 4-5 min on each side.

Fried chicken that is healthy and oh so yummy. Enjoy!!!
